Cabbage is not only for coleslaw

Cabbage is one of very under appreciated vegetables.

It can be absolutely anything – from salad to steak (yes – a cabbage steak), from condiment to pie filling.

And it is healthy and delicious in any instance.

Cabbage pie.

Prepare the filling by frying finely chopped onion, the add finely sliced cabbage. Season with salt and pepper and cook till cabbage is soft and fully cooked. I usually add chopped hard boiled egg to the filling. You can use any pastry for this, home made, store bought, puff pastry will work too. It can be any shape – round, rectangular, roll, one piece pie or separate small ones. Even stuffing crepes with cabbage filling will work and will go great with any soup.

Cabbage steak/deconstructed

Cut big slices of cabbage (about an inch thick), place on the parchment paper, season with salt and pepper, sprinkle with olive oil and balsamic vinegar and put into preheated to 375 oven. Roast for 35-45 minutes. It’s can be a dish of its own, can be topped with fried or poached egg, hummus. And if you disassemble it – use the cabbage ribbons to wrap pieces of sausage.
