Octopus Salad

Super simple, with 2 of my favorite Spanish products – octopus and paprika. They are great together!

Ingredients:

  • Spanish Octopus (Pulpo Cocido)
  • Jalapeño or chili pepper
  • Scallions (or chives)
  • Capers (optional)
    • Dressing:
      • white wine vinegar
      • olive oil
      • lots of Spanish paprika
      • salt
      • pepper

Directions:

  • Place dressing ingredients in a small bow or jar, mix well
  • Thinly slice octopus, chili peppers, scallions
  • Pour dressing over octopus, mix well, make sure every slice is covered.
  • Let it sit in a fridge for a couple of hours to allow paprika to marinate octopus
