New this year – this gorgeous round summer squash, with very sweet and delicate flavor, great for stuffing and useful for presentations. Just scoop the flesh out and use those cute little barrels as dishes for your dips or sides, filling it with rice, quinoa or cuscus for your side dish.
It can be stuffed with anything – ham, eggs, ground beef, other vegetables. Here I used some ham and a mix of ground zucchini with cheese.
Baked for 20 min.
