They taste even better than they look!
A surprisingly simple dish, it can be made with a single egg just for yourself, or with more if you have company.
Start by separating the whites and the yolks, keeping the yolks in their shells so they don’t dry out.
Beat the whites with a dash of salt and add a little bit of shredded cheese of your choice. I used Manchego here, though Gruyere, cheddar or any hard cheese will work.
Place parchment paper onto a baking sheet, arrange kale leaves as a pillow or plate for each egg, sprinkle with several drops of olive oil and add salt and pepper.
Split the beaten whites into equal parts and load onto the kale plates.
Put the baking sheet into an oven preheated to 375 F for 5 minutes (make sure the oven has time to preheat!). After 5 minutes, once the whites get a beautiful golden color, remove the sheet from the oven. Make nests for the yolks with a spoon and carefully put the yolks inside the whites. Put the baking sheet back into the oven for about a minute and a half.
That’s it! Just transfer those beautiful clouds onto your plate, sprinkle the yolks with some salt and pepper, garnish with tomatoes or greens and enjoy. The whole thing takes no longer than 10 minutes, not much longer than your regular sunny side up eggs but the presentation and the taste is incomparable.
