The best about this salad – it takes no time to make, and you can mix and match the ingredients – replace pickles with capers or olives or use all three if you like it briny, substitute green onions with red or skip onions all together if you don’t like onions, add parsley for more green color etc. It can be a complete lunch, served on a plate, sandwich, lettuce leaf. Very easy to transport, great for a picnic, for a potluck or buffet table. You can stretch it by adding hard boiled eggs or cooked rice And the last but not least – it’s very satisfying and delicious.
