Beautiful and tasty- just simple pork spare ribs, rubbed in salt, pepper, coriander, paprika, garlic mixture. Wrapped it with the cooking twine to keep crown shape. I roasted asparagus and cauliflower separately, they require different times.
Just salt, pepper, lemon zest and 20 minutes for asparagus.
Some more spices and time for cauliflower – I used harissa paste, mixed with some olive oil for the color, and sprinkled it with breadcrumbs. After 40 minutes turned out quite spicy.
Baked corn squash with roasted prosciutto and pumpkin seeds. The spring part in this – fresh sage leaves, that I roasted the squash with. They are so crispy and tasty, I think they deserve to be a dish of its own. Sprinkled with balsamic sauce. Turned out delicious.
