Fish – fast and fabulous!

Food has to be tasty! The same applies to healthy food – it’s not necessarily steamed vegetables.

These are several variations of fish – all different sauces and flavors, all delicious, cooked fast and in one pan.

Salmon with spinach, cream and wine sauce.

Slice small shallot, saute on medium heat till translucent, add spinach till wilted. Add a little white wine, cream, season and mix well. When your sauce is boiling place a piece of salmon on top skin side down (if there is a skin), spoon some sauce onto the fish and cover the lid. Let it cook for 5 minutes. Serve immediately.

Asian Cod (or Haddock, any white fish will work)

The same idea of making a sauce first. This one started with sauteing a couple of mushrooms, sliced sweet peppers, cashew nuts and green onions. Added soy sauce, drizzle of sesame oil. Then put my fish on top, reduced heat and covered the lid. In 5 minutes poured over basmati rice. Sesame seeds for garnish.

Haddock with tomato sauce

Start frying sliced small shallot or onion, peppers, and garlic. Add diced tomatoes or tomato juice, maybe tomato paste, wine if you have it, season with salt and pepper. Bring your sauce to a boil, add fish on top, cover the lid and cook for 5 minutes.

Great with rice, pasta, salad
