These are traditional Russian mini cheese cakes (syrniki) with mashed roasted pumpkin.
The tradition says: take 1/2 of ricotta cheese (home made tvorog), 1 egg, 1tbsp flour, 1 tsp sugar, pinch of salt. Mix everything together in a small bowl, form pancakes with a spoon (or roll small balls, form patties and dust them with flour) and fry. They make a great breakfast with sour cream or jam or both.
Adding 2 table spoons of mashed roasted butternut squash makes the color brighter, the flavor deeper and more satisfying. Very highly recommended!
