I love this pumpkin salad, made with roasted pumpkin, brussel sprouts, prosciutto and pumpkin seeds!
Instead of chopping up a butternut squash last night I decided to use acorn squash instead: I cut it in half, scooped out the middle to create a bowl, and sprinkled with olive oil, salt and pepper. Each salad ingredient: squash, brussel sprouts, prosciutto, pumpkin seeds was roasted separately, given the appropriate time, then combined and placed inside the pumpkin bowls. I sprinkled the whole thing with balsamic vinegar and decorated with dried cranberries.
The pumpkin bowl looked adorable!
