It doesn’t have to crown your every dinner.  But when it does-it should be an Epiphany, a celebration of flavors. Otherwise it’s a wasted calories intake. In one bite you may have layers of flavors and feel an airiness of cream, puffiness of pastry, crunchiness of nuts, freshness of berries, tartness of citrus, richness of chocolate, hint of ginger or liqueur – whatever your dessert is made of. You can enjoy several bites of blissful baking artistry, and not be just knocked down by a punch of sugar to your belly that blocks your taste buds and stays forever on your heaps. Let it just become sweet and be no sweeter, so you feel the rest.
